Impress your date with an exciting and easy menu

For all those in need of an easy Valentine's Day dinner menu, this is one sure to make your sweetie swoon without breaking the bank or wasting too much of your time. Get ready to impress the one you love.  

 

 

 

As an easy appetizer, serve tortilla chips with cold salsa and guacamole, all store bought. Presentation is key: place the tortilla chips in a regular bowl lined with colored napkins and the salsa and guacamole in matching bowls. 

 

 

 

Fast and Delicious Chicken Fajitas with garlic and cilantro will put some spice into your Valentine's Day dinner, and the lime flavor will put you and your date in a romantic, tropical mood.

1 large zippered sandwich bag 

 

2 skinless chicken breasts cut into strips 

 

1 lime cut in half 

 

2 cloves of garlic, minced 

 

fresh cilantro (as much as you like) 

 

1-2 bell peppers cut into strips 

 

1/2 red onion cut into strips  

 

flour tortillas 

 

1 teaspoon oil 

 

 

 

Put the chicken in a plastic bag with the juice from half of your lime, cilantro and garlic. Let this mixture marinade for up to two hours. In a large pan, heat the oil on medium-high. Place the chicken in the pan and cook until both sides are browned and the insides are no longer pink. Add peppers and onion and cook at medium heat just until vegetables are tender. Turn off heat and drizzle with the juice from the remaining half of your lime. Serve rolled up in warm tortillas with salsa, cheese and sour cream. Serves two. 

 

 

 

Show your Valentine how sweet he or she is with a quick and easy dessert that will knock more than just their socks off. Red and White Berries 'n' Cream, with it's cold and delicious taste, will have both host and guest snuggling close to keep warm.

1 pint ripe strawberries 

 

2 tablespoons sugar 

 

1 pint French vanilla ice cream, softened  

 

 

 

Rinse berries. Halve berries; reserve a few for garnish, one per person. Place halved berries in a small glass bowl and sprinkle with sugar. Toss berries and sugar. Spoon soft French vanilla ice cream over berries and smooth. Cover bowl and place in freezer for up to an hour. When you serve berries and ice cream, garnish each dish with remaining berries. Serves two.
